Rice plays a crucial role in Eastern Mediterranean cuisine, complementing stews, proteins, and even standing alone alongside yogurt or salads. How to Prepare
- 1/3 cup vermicelli noodles
- 1 cup long grain rice
- 6 tsp butter
- 2 cups of boiling water
- Salt to taste

- In a heavy pan, warm the butter and add the vermicelli with salt.
- Stir the vermicelli constantly as you need to make sure it is golden and can burn very easily.
- Once golden brown, add 1 cup washed and rinsed rice. Mixing well, for the rice to absorb all the butter and salt.
- Add the water, give it a stir and close the lid and reduce heat.
- Let it simmer for about 20 minutes until the water is absorbed.
- Turn off heat, place clean kitchen towel under the lid to absorb the steam for about 5-10 minutes.
- Give it a mix to make it fluffy and serve it as a pairing to your favorite dish.
