Labne Sandwich

Living in Lebanon as a child in the 1970s was a time of simplicity and organic living. Packaged foods were scarce, and aside from the occasional birthday celebration with treats like pizza, our diet resembled that of adults. Pita bread was a staple in our household, and Labne found its place on every table, accompanying our main meals. The combination of Labne and pita was our go-to for crafting school lunches.

Each morning, before heading to school, I would visit the local bakery to fetch fresh pita for our home. The aroma of Lebanese bakeries is something I wish I could adequately convey.

Ingredients:

  1. Large pita bread
  2. Labne (generous amount)
  3. Thinly sliced cucumbers
  4. Dried mint
  5. Olive oil
  6. Green olives (typical of Lebanon)

Steps:

  1. Open the large pita bread.
  2. Generously spread Labne across the entire surface.
  3. Arrange thinly sliced cucumbers on top of the Labne.
  4. Sprinkle dried mint evenly over the cucumbers.
  5. Drizzle olive oil over the mint and cucumbers.
  6. Add green olives for a typical Lebanese touch.
  7. Wrap the assembled ingredients tightly to create a delicious sandwich.
  8. Enjoy this amazing lunch or snack, a perfect representation of the simple and authentic flavors of Lebanon.
