Red Beets Salad

In Mediterranean countries, beets are very popular and are often served with a simple recipe of olive oil and vinegar. This recipe requires only a few ingredients, comes together easily, and makes an incredible snack option as it can last in the fridge for 4-5 days. While there are various ways to cook red beets, I particularly enjoy them when baked. They also make a delicious side dish for any protein.

Ingredients:

  • 1 ½ pounds red beets
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • Salt to taste

Instructions:

  1. Preheat the oven to 360°F.
  2. Scrub the beets clean, cut off the leaves, wrap them in aluminum foil, and place them on a baking sheet. Bake for about one hour. Remove from the oven, let them cool, peel, and slice according to your preference.
  3. Place the sliced beets in a bowl. In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, and salt. Pour the dressing over the beets.
