Colorful Carrots

As I strolled through the Trader Joe’s produce aisle, I found myself captivated by a bunch of meticulously cleaned, equally-sized, colorful carrots that resembled lollipops. I knew I had to bring them home and celebrate their vibrant beauty with a Mediterranean-inspired dish—a simple and joyful culinary experience.

Ingredients:

  • 8 colorful petite carrots
  • ¼ cup olive oil
  • ¼ cup pine nuts
  • Salt to taste
  • Red pepper flakes (optional)

Instructions:

  1. Preheat the oven to 400°F.
  2. Toss all ingredients together, excluding the pine nuts.
  3. Line a baking sheet with parchment paper and spread the carrots evenly.
  4. Bake for approximately 25 minutes. Five minutes before removing from the oven, add the pine nuts and turn the carrots to ensure even roasting.
