Chicken Breast with Feta

This recipe always look rich and has a gourmet style. Yet, it can be put together in a few minutes and the taste is amazing, especially paired with a simple salad. Since chicken breast is not fatty, the filling makes it very soft as it oozes out when cut into it.


Ingredients:

  • 2 boneless, skinless chicken breasts, butterflied (about 2 pounds)
  • 3 ounces crumbled feta cheese
  • 4 tablespoons cream cheese
  • 1/4 cup lightly chopped fresh parsley, plus more for garnish
  • 1/4 cup chopped Kalamata olives
  • 2 cloves garlic, minced
  • 1 tablespoon oregano
  • 2 green onions, green parts only, thinly sliced
  • 3 teaspoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
