Red Beets Bulghur Salad

In Eastern Mediterranean kitchen, bulghur is a staple ingredient that can be found in all cupboards. As I have often mentioned there are several grind levels. I like to use the finest bulghur. The color of the red beets mixed with herbs, bulghur ,fresh lemon juice, and olive oil will bring joy in every bite.

Ingredients

  • 4 Red beets roasted, skinned and cut into fine cubes
  • ½ cup bulghur #1 found in Middle eastern stores
  • 3 scallions finely chopped
  • 1 cup mixed fresh herbs. (it can be dill, parsley, cilantro, basil)
  • ¼ cup fresh lemon juice (about two large lemons)
  • 1/2 cup olive oil
  • salt to taste
  • 2 cloves of fresh garlic meshed

In a big bowl, combine all ingredients and enjoy.
