Dates Walnut with a Truffle Brie

There is something incredibly romantic and joyful about creating this dish and seeing it come together on your plate. For me, the taste of this dish is deeply nostalgic, reminiscent of rainy days in Manhattan and charming walks into French cafes in Paris. The combination of soft brioche with mashed dates, walnuts, brie, rosemary, and honey creates a perfect symphony of flavors.

Ingredients:

  • 10 dates deseeded
  • 2 tablespoons of walnuts
  • 1 tablespoon of honey
  • Your favorite bread (such as brioche)
  • Truffle brie slices or your favorite soft cheese
  • Drizzle of olive oil
  • A pinch of dried rosemary
  • A pinch of salt

Instructions:

  1. Place the dates in a cup of hot water to soften.
  2. Remove the softened dates from the water and place them in a mortar and pestle to mash well.
  3. Add the walnuts and continue mashing to create a paste, ensuring the walnuts remain slightly crunchy.
  4. Drizzle some olive oil into the paste to make it smooth.
  5. Drizzle some olive oil on a non-stick pan and warm and toast the bread.
  6. Spread the date and walnut paste onto the toasted bread.
  7. Add a slice of cheese on top of the paste, and sprinkle with a tiny pinch of salt and dried rosemary.
