I grew up in an era where the world was smaller and people were more aware of seasonal produce. When asparagus is in season, it is very thin, tender and delicate. This salad paired together with other ingredients makes for a celebration.

Ingredients:
- 1 lb fresh asparagus
- 4 oz crumbled feta cheese
- 2 avocados
- 1/2 cup roasted slivered almonds
- 2 scallions, finely chopped
- 1/4 cup chopped fresh mint
Dressing:
- 3 tbsp red wine vinegar
- 4 tbsp olive oil
- Salt and black pepper to taste

Instructions:
- Trim one inch from the asparagus stems and chop them into small pieces.
- Peel and pit the avocados, then chop them into small cubes.
- In a bowl, combine the asparagus, feta cheese, avocados, almonds, scallions, and mint.
- In a separate bowl, whisk together red wine vinegar, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss gently to combine. Enjoy the fresh flavors!
