Barley Grain Dessert

In Eastern Mediterranean countries, there are many desserts that can be considered healthy. It is not always made of white flour and sugar. This sweet treat is very popular especially for celebrating a baby’s first tooth. Levant Christians of Palestine, Lebanon and Jordan enjoy this on December 4th in honor of St. Barbara. I made this for my children as a snack. It becomes even more delicious after it is kept in a refrigerator. You can also decorate it with your favorite candies and nuts. 

Ingredients:

  • 1 cup whole wheat barley, soaked overnight and drained
  • 3.5 cups water
  • 4 tablespoons soft honey, for drizzling
  • 2 tablespoons orange blossom water
  • 1 tablespoon rose water
  • 2 tablespoons golden raisins
  • 2 tablespoons dried apricots, soaked in warm water for 30 minutes and drained
  • 2 tablespoons pine nuts, soaked in water for 2 hours
  • 2 tablespoons blanched almonds, soaked in water for 2 hours and drained
  • Half a pomegranate, seeds removed

Instructions:

  1. Place the soaked and rinsed barley in a heavy-bottomed pan with the water and bring to a boil.
  2. Reduce the heat and let it cook for one hour or until tender and the water is absorbed but not burnt.
  3. Transfer to a serving bowl and drizzle with honey, orange blossom water, and rose water.
  4. Add the soaked raisins and apricots and mix lightly.
  5. Garnish with the soaked pine nuts, blanched almonds, and pomegranate seeds.
