Chicken Wings in Sumac Sauce

I first truly fell in love with chicken wings in the US. Having crispy grilled wings served with blue cheese in sports bars is still a treat that I enjoy at times with my friends. This recipe was introduced to me by my Lebanese friend Charbel living in NY. I remember tasting it the first time; the sky opened, and I saw heaven. This simple, inexpensive bar food now gets served regularly in my home during cocktail hour before we sit for dinner.

Ingredients:

  • 20 chicken wings
  • 4 tablespoons olive oil
  • Juice of 1 lemon
  • 3 large cloves of garlic, crushed
  • 1 ½ tablespoons sumac
  • Sea salt for sprinkling

Instructions:

  1. Preheat the oven to 400°F. It can also be grilled.
  2. In a large bowl, add olive oil, crushed garlic, sumac, lemon juice, and mix.
  3. Add chicken wings and rub with the sauce. Cover and leave in the refrigerator for at least two hours.
  4. Place the wings in a baking pan in a single layer.
  5. Pour over the marinade and roast for about 20 minutes.
  6. When the wings are ready, serve and enjoy!
