Ful Medames Dip

The Middle East is known for its savory popular breakfast called Ful Madames.
This variation is my way of serving it as a dip, making it a cousin of hummus. It is very
tasty and nutritious.

Ingredients:

  • 2 cans of fava beans
  • 2 cloves of garlic, mashed
  • 6 tablespoons tahini
  • 8 tablespoons fresh lemon juice
  • 1 tablespoon cumin
  • Salt to taste
  • Olive oil for drizzling generously Center Garnish:
  • 2 medium tomatoes, chopped
  • 1 jalapeno, finely chopped
  • ¼ cup parsley, chopped
  • Juice of fresh lemon
  • Salt to taste

Instructions:

  1. Rinse the fava beans with clear water and transfer them to a food processor.
  2. Add all the ingredients and blend briefly. Add 2 or 3 ice cubes until desired creaminess is achieved.
  3. Transfer the dip to a serving bowl, drizzle a generous amount of olive oil, and serve with salad as garnish.
