Raw Broccoli Salad

Mediterranean countries are known for their love of fresh produce, with a daily consumption of fresh vegetables being a staple in their diets. This salad is perfect for when you want to feel full for the whole day, especially with its rich yogurt dressing.

Ingredients:

  • 1 medium broccoli head, cut into small florets
  • 1 medium red onion, chopped
  • 1 small lettuce, chopped
  • 2 Persian cucumbers, chopped
  • ½ cup any olives of your choice
  • 1 can chickpeas (optional)
  • 1 cup crumbled feta
  • 1 large ripe avocado, cut into cubes

Dressing:

  • ½ cup plain yogurt
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 1 garlic clove, mashed
  • 2 tablespoons za’atar
  • Salt to taste

Instructions:

  1. Place all the vegetables in a bowl.
  2. In a small bowl, mix together the dressing ingredients and pour over the salad.
