This vegan recipe is incredibly delicious, easy to make, and a real comfort food.
Ingredients:
- 2 cans white beans
- 1 cup olive oil
- 1 large onion, thinly sliced
- 2 cloves garlic, finely chopped
- 1 cup carrots, finely chopped
- 1 cup potato, finely chopped
- 1 green bell pepper, finely chopped
- ½ bunch parsley, minced
- 2 medium tomatoes, finely minced
- 1 large lemon, fresh juice
- Salt to taste
- Pinch of Aleppo pepper


Instructions:
- Heat olive oil in a heavy skillet. Add the onion and sauté until the onion is translucent.
- Add the garlic, carrots, potatoes, green pepper, and some of the parsley. Cook for about 10 minutes.
- Add the tomatoes and cook for another 10 minutes.
- Add the remaining parsley, beans, lemon juice, salt, and Aleppo pepper.
- Transfer to a serving bowl, cover, and chill. Serve cold with toasted warm pita.
