White Bean Vegan Dish

This vegan recipe is incredibly delicious, easy to make, and a real comfort food.

Ingredients:

  • 2 cans white beans
  • 1 cup olive oil
  • 1 large onion, thinly sliced
  • 2 cloves garlic, finely chopped
  • 1 cup carrots, finely chopped
  • 1 cup potato, finely chopped
  • 1 green bell pepper, finely chopped
  • ½ bunch parsley, minced
  • 2 medium tomatoes, finely minced
  • 1 large lemon, fresh juice
  • Salt to taste
  • Pinch of Aleppo pepper

Instructions:

  1. Heat olive oil in a heavy skillet. Add the onion and sauté until the onion is translucent.
  2. Add the garlic, carrots, potatoes, green pepper, and some of the parsley. Cook for about 10 minutes.
  3. Add the tomatoes and cook for another 10 minutes.
  4. Add the remaining parsley, beans, lemon juice, salt, and Aleppo pepper.
  5. Transfer to a serving bowl, cover, and chill. Serve cold with toasted warm pita.
