It is a rainy NYC day. A type of day, you just want to make a delicious one pan cod, garlicky, lemony and infused in aromas spices and all cloaked in olive oil.
Ingredients:
- Pieces of flounder
- 10 ounces cherry tomatoes, left whole
- 1 tablespoon fresh lemon juice
- 1/4 cup olive oil
- 2 tablespoons melted butter
- 4 pieces of garlic cloves, minced
- 1/2 cup all-purpose flour
- 1 teaspoon cumin powder
- 3/4 teaspoon salt
- 1/2 teaspoon paprika
Instructions:
- Preheat the oven to 400 degrees F.
- In a small bowl, mix together the lemon juice, olive oil, and melted butter.
- In another shallow plate, add all the coating ingredients and mix.
- Pat the fish dry. Dip the fish in the lemon sauce, then dip it in the flour mixture. Shake off excess flour.
- Bring it to a baking pan with a baking sheet, place the fish in the center and cherry tomatoes around it.
- To the remaining lemon sauce, add the minced garlic and mix. Drizzle all over the fish fillets and tomatoes.
- Bake in the oven for about 15 minutes, check to see if the fish flakes easily.
