One Pan Wild Cod

It is a rainy NYC day. A type of day, you just want to make a delicious one pan cod, garlicky, lemony and infused in aromas spices and all cloaked in olive oil.

Ingredients:

  • Pieces of flounder
  • 10 ounces cherry tomatoes, left whole
  • 1 tablespoon fresh lemon juice
  • 1/4 cup olive oil
  • 2 tablespoons melted butter
  • 4 pieces of garlic cloves, minced
  • 1/2 cup all-purpose flour
  • 1 teaspoon cumin powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon paprika

Instructions:

  1. Preheat the oven to 400 degrees F.
  2. In a small bowl, mix together the lemon juice, olive oil, and melted butter.
  3. In another shallow plate, add all the coating ingredients and mix.
  4. Pat the fish dry. Dip the fish in the lemon sauce, then dip it in the flour mixture. Shake off excess flour.
  5. Bring it to a baking pan with a baking sheet, place the fish in the center and cherry tomatoes around it.
  6. To the remaining lemon sauce, add the minced garlic and mix. Drizzle all over the fish fillets and tomatoes.
  7. Bake in the oven for about 15 minutes, check to see if the fish flakes easily.
