Feta Corn on the Cobb

Corn is such a favorite to almost all cultures. There are many ways to be enjoyed. I honestly do not know one bad corn preparation. However, my tastebuds easily go to Eastern Mediterranean ingredients. This is a great recipe, I cut the corn lengthwise in half. It comes together very easily. 

Ingredients

  1. 3 fresh clean corn
  2. 3 TBS olive oil plus for brushing
  3. ¾ cup crumbled feta
  4. 2 TBS za’atar

Instructions

Preheat oven Broil 450 F.

  1. On a steady wooden board, using sharp knife, cut the tips of the corn. Turn it and cut it lengthwise. Place it on a baking trap kernel facing up. Brush them with olive oil and place it on the oven. Check after about 10 minutes, you may have to move them around to make sure all are cooked and charred. 
  2. Meanwhile, in a separate bowl, bring rest of the ingredients except olive oil. Mix well, add oil and mix again. 
  3. Remove the corn from the oven, spread the mix while it hot and serve.
