Mediterranean Cod Fish with Pasta

While cod itself is not native to the Mediterranean, I still enjoy using it with Mediterranean-style recipes due to its mild flavor and firm texture. Simplicity of my recipes goes well with cod and adding pasta to it becomes a whole meal.

Ingredients:

  • 2 cod fillets (about 1 lb)
  • 3 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine 
  • 1/2 cup Kalamata olives
  • 1/4 cup capers, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)
  • 12 oz spaghetti or linguine

Instructions:

  1. Prepare the Cod:
    • Season the cod fillets with salt and black pepper on both sides.
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the cod fillets and sear for 2-3 minutes on each side until golden brown. Remove the cod from the skillet and set aside.
  2. Prepare the Sauce:
    • In the same skillet, add the remaining 2 tablespoons of olive oil. 
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
    • Pour the white wine. Stir to combine.
    • Add the Kalamata olives, capers, dried oregano, dried thyme, smoked paprika, red pepper flakes (if using), and lemon juice. Stir well and let the sauce simmer for 10-15 minutes, allowing the flavors to meld together—season with salt and black pepper to taste.
  3. Cook the Pasta:
    • While the sauce is simmering, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  4. Combine and Cook:
    • Add the seared cod fillets back into the skillet with the Mediterranean sauce. Cover and cook for an additional 5-7 minutes, or until the cod is cooked through and flakes easily with a fork.
    • Gently remove the cod fillets from the skillet and set aside.
    • Add the cooked pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to achieve the desired consistency.
  5. Serve:
    • Plate the pasta and sauce on serving dishes. Place a cod fillet on top of each serving.
    • Garnish with freshly chopped parsley.
    • Serve immediately.

Serving Suggestions:

  • Pair this dish with a side of crusty bread to soak up the delicious sauce.
  • A fresh green salad with a lemon vinaigrette would make a perfect accompaniment.
