Charred Whole Roasted Cauliflower with Mozzarella and Mediterranean Spices

This cauliflower is first parboiled for tenderness, then roasted under the broiler with cumin, sumac, and oregano. Mozzarella is tucked into the florets, melting into a luscious, spiced interior. A final sprinkle of fresh parsley brightens up the dish.


Ingredients:

  • 1 whole cauliflower, trimmed but kept intact
  • 1 tsp salt (for boiling)
  • 1 tbs ground cumin
  • 1 tbs sumac
  • 2 tsp dried oregano
  • 1 tsp salt (for seasoning)
  • 1 cup shredded mozzarella or torn fresh mozzarella
  • 2 tbsp chopped fresh parsley

Instructions:


1. Bring a large pot of salted water to a boil.
Lower the whole cauliflower into the water and simmer for about 6-8 minutes, until slightly tender but still firm.
Drain and let it cool slightly.
Season & Broil

2. Place the cauliflower on a baking sheet lined with parchment paper.
Sprinkle the cumin, sumac, oregano, and salt evenly over the cauliflower.
Using your fingers or a small spoon, gently push the mozzarella into the florets, ensuring it’s tucked inside rather than just on top.


3. Preheat the broiler to 390F
Place the cauliflower under the broiler for 10 minutes, rotating halfway, until the cheese melts and the edges of the cauliflower are beautifully charred.


Garnish & Serve

Remove from the oven and immediately sprinkle with fresh parsley.
Let it rest for a couple of minutes before serving whole or slicing into wedges.
