Tabouleh with brown lentils (Gluten Free )

Tabouleh, the bright and herbaceous Eastern Mediterranean salad, is traditionally made with bulgur, parsley, tomatoes, lemon, and olive oil. When bulgur replaced with brown lentils, it transforms into a dish of nourishment and healing.

Ingredients:

  • 1 cup cooked brown lentils (al dente—not mushy!)
  • 2 bunches flat-leaf parsley, finely chopped
  • 1/2 bunch fresh mint, finely chopped
  • 3 medium tomatoes finally chopped
  • 4 scallions 
  • Juice of 2–3 lemons
  • 3–4 tbsp extra virgin olive oil
  • Sea salt to taste

Combine all and enjoy!
