Stuffed Armenian Cabbage Dolma (Anatolian Roots)

Stuffed cabbage is a joyous winter recipe. Taking a nutritious humble cabbage and pairing it with delicious meat rice filling will be your favorite recipe, especially winter months. I took the traditional recipe and instead rolling one by one. I made into one pot dish and it was just really fun presentation without compromising the taste.

Ingredients:

For the cabbage:

  • 1 large green cabbage
  • 1 tsp salt (for boiling water)

For the filling:

  • 500 g (1 lb) ground lamb (or half lamb, half beef)
  • 1 cup short-grain rice
  • 1 large onion, very finely minced
  • 2 tbsp tomato paste
  • 1 tbsp red pepper paste (optional but traditional)
  • 1/4 cup chopped parsley/dill (don’t waste the stems)
