At Yava, a Palestinian restaurant in Dubai, the mutabal is finished with Palestinian extra-virgin
olive oil—a beautiful expression of the Levant’s deep olive-growing tradition. The fruity, peppery
oil brings brightness and richness to the deeply fire-charred eggplant, allowing the smoke,
tahini, lemon, and olive oil to come together in balance. It is a simple finishing touch, but an
important one: use an olive oil with character, because in a dish this elemental, you can taste it.
