Pilaf with Vermicelli

Rice plays a crucial role in Eastern Mediterranean cuisine, complementing stews, proteins, and even standing alone alongside yogurt or salads. With its versatility, there are countless recipes, but one simple yet beloved dish has stood the test of time. My daughters, even as adults, still find joy in this pilaf whenever we share a meal together.

How to Prepare

  • 1/3 cup vermicelli noodles
  • 1 cup long grain rice
  • 6 tsp butter
  • 2 cups of boiling water
  • Salt to taste

Direction

  1. In a heavy pan, warm the butter and add the vermicelli with salt.
  2. Stir the vermicelli constantly as you need to make sure it is golden and can burn very easily.
  3. Once golden brown, add 1 cup washed and rinsed rice. Mixing well, for the rice to absorb all the butter and salt.
  4. Add the water, give it a stir and close the lid and reduce heat.
  5. Let it simmer for about 20 minutes until the water is absorbed.
  6. Turn off heat, place clean kitchen towel under the lid to absorb the steam for about 5-10 minutes.
  7. Give it a mix to make it fluffy and serve it as a pairing to your favorite dish.
