Whole Roasted Chicken with Apple

The chicken has a delightful balance of sweetness and tanginess, with the flavors of apples, pomegranate molasses, and sumac evoking the cozy feeling of autumn.

Ingredients:

  • A whole chicken, patted dry
  • 2 cups of diced apples (cut into ¼ inch cubes)
  • 1 cinnamon stick
  • ½ cup pomegranate syrup
  • 2 tablespoons sumac
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Cooking Instructions:

  1. Leave the chicken at room temperature for 30 minutes before cooking.
  2. Preheat the oven to 425°F (220°C).
  3. Sprinkle salt and pepper all over the chicken.
  4. Pour pomegranate syrup over the diced apples.
  5. Stuff the chicken with the apples and the cinnamon stick.
  6. Gently separate the skin from the flesh by sliding a spoon or your fingers underneath it and spread sumac under the skin.
  7. Place the prepared chicken in a roasting pan, tuck the wings, and tie the legs with kitchen twine.
  8. Cover the chicken and roast on the middle rack for 45 minutes.
  9. Uncover the chicken and continue to roast for another 45 minutes, basting it every 10 minutes with its juices.
  10. Once cooked, remove the chicken from the oven and let it rest for 15 minutes before serving.

Serve the chicken with its apples, which become buttery and flavorful from the drippings. Enjoy the incredibly sweet and mildly tangy flavors of this autumn-inspired dish.
