Grilled Red Snapper In Cumin

Cumin, an ancient spice cherished for centuries in the Mediterranean, takes center stage in this recipe. The robust taste of these tiny dried fruits enhances the flavor of red snapper, bringing a delightful smoky and earthy essence to its sweetness.

Ingredients:

  • 1 Whole red snapper
  • Salt for rubbing inside and out
  • 6 tbsp fresh lemon juice
  • 3 tbsp cumin seeds (dry toasted and freshly ground)
  • 1 tsp Paprika or Aleppo pepper
  • 2 cloves of minced garlic
  • ½ tsp fresh ground pepper
  • ½ cup olive oil
  • ½ cup fresh parsley

Instructions:

  1. Preheat the oven to 425°F.
  2. Wash and pat dry the red snapper, rubbing salt inside and out.
  3. In a bowl, combine all ingredients, including freshly toasted and ground cumin seeds.
  4. Fill the inside of the fish with fresh parsley.
  5. Transfer the fish to a baking pan, rub the dressing on all sides, and bake for about 10 minutes on each side.
