Sahlab: The Perfect Winter Companion

This traditional Levant beverage has been cherished across the Eastern Mediterranean region for centuries. In the city of Bethlehem, Christian Palestinians mark the holiday season with Christmas celebrations.

Ingredients:

  • 4 cups of whole milk (can be substituted with any plant-based milk)
  • 3 tablespoons of cornstarch
  • 4 tablespoons of cane sugar
  • 1 teaspoon of orange blossom
  • 1 teaspoon of rose water

Topping:

  • 1/3 cup of coconut
  • 1/3 cup of chopped pistachios and/or walnuts
  • Cinnamon to taste

Directions:

  1. In a separate bowl, blend the cornstarch with half a cup of milk until smooth.
  2. In a heavy-bottomed pan, combine the remaining cold milk with the cornstarch mixture and sugar. Cook over medium-low heat, stirring constantly to ensure there are no lumps.
  3. After the initial boil, continue cooking for about 10 minutes. Then, add the orange blossom and rose water, give it a final stir, and turn off the heat.
  4. Transfer the mixture into mugs, small bowls, or fancy cups.
  5. Garnish with your favorite toppings.
