Cabbage Salad

Many people in the US and Europe enjoy cabbage as a fermented food, similar to coleslaw. In Mediterranean countries, we also enjoy it as a salad. The crunchiness and spices, topped with fresh lemon and olive oil, make for an incredible celebration.


Ingredients

  • ½ head of white cabbage
  • ¼ cup fresh mint chopped
  • 1 fresh lemon
  • 1/3 cup olive oil
  • 1 TBS sumac
  • salt to taste

Instructions

  1. Thinly slice the cabbage
  2. Mix all other ingredients and serve immediately.
