Roasted Pepper and Feta Dip

Roasted red peppers should be a must in any kitchen pantry. Their versatile use brings taste, color, and joy to many salads, sandwiches, and in this case, as a dip.

Ingredients:

  • 1 cup roasted red peppers
  • 1 cup good feta (must always be in brine)
  • 2-3 tablespoons of fresh lemon juice
  • 3 tablespoons olive oil, plus extra for drizzling
  • 2 garlic cloves, mashed
  • 1 teaspoon dried mint
  • ½ teaspoon cayenne pepper

Garnish:

  • ½ teaspoon Aleppo pepper
  • ¼ cup toasted pine nuts
  • Olive oil for drizzling

Instructions:

  1. Mash the garlic to ensure it’s creamy. A mortar and pestle works well for this.
  2. In a food processor, add all ingredients, including the mashed garlic. Aim for a slightly coarse texture for a rustic feel and wholesome taste. Once you achieve your preferred texture, transfer it to a bowl or serving platter. Garnish with Aleppo pepper, olive oil, and pine nuts.
