Burrata with Zaatar and Cherry Tomato Salad


I stumbled upon this recipe by accident one summer while serving BBQ with a Greek salad, which of course includes feta. At the last minute, some friends wanted to bring extra people with them, so I frantically ran to the refrigerator to add some more appetizers. That’s when I found a Trader Joe’s burrata and decided to create this delicious and decadent dish with just a few simple steps.


Ingredients:

  • 1 pint mixed cherry tomato medley
  • ¼ cup fresh mint (just leaves)
  • 2 tablespoons fresh lemon juice
  • Salt to taste
  • 2 balls of burrata
  • 3 tablespoons za’atar
  • ¼ cup toasted pine nuts
  • Pomegranate molasses for drizzling (optional)
  • 3 tablespoons olive oil

Instructions:

  1. Cut the mixed colored cherry tomatoes in half. Add the mint, fresh lemon juice, and salt to taste. Mix and set aside.
  2. Pat dry the burratas, making sure they have no wetness. Toss the burratas with za’atar, making sure all sides are covered.
  3. Place the burratas in the middle of a serving platter and split each ball in half without cutting all the way. Place the tomato mix around the burrata.
  4. Meanwhile, in a heavy-bottomed pan, add pine nuts and toast them until they are golden brown. Immediately, pour them over the burrata and the tomatoes and serve.
  5. Drizzle generously with olive oil, pomegranate molasses, and serve.
