Levant Cream Cheese Pudding


This thick, creamy dessert is a favorite in Eastern Mediterranean countries. It is prepared on the stovetop and is perfect for making in advance as it becomes even more delicious when chilled.

Ingredients:

  • 4 cups whole milk
  • 4 Tbs sugar
  • 1 cup cream cheese
  • 6 Tbs cornstarch
  • 3 tsp orange blossom water
  • 1 Tbs pine nuts
  • 2 Tbs walnuts

Syrup:

  • 1 cup sugar
  • ½ cup water
  • 2 Tbs fresh lemon juice

Instructions:

  1. On medium heat, bring the milk and sugar to a boil in a heavy-bottomed pan, stirring constantly. Reduce the heat to low and add the cream cheese, beating it into the milk until a smooth mixture forms.
  2. In a separate small cup, combine the cornstarch with a quarter cup of the milk mixture and whisk until smooth. Add this mixture into the pan, whisking vigorously until the mixture thickens.
  3. Stir in the orange blossom water and let the mixture simmer for another 10 minutes. Remove from heat, transfer to a shallow dish, and allow it to cool before refrigerating.

Syrup:

  1. In a small pan, combine the sugar and water. Bring to a boil, stirring constantly until the sugar is dissolved. Add the lemon juice, then reduce the heat and let the syrup simmer for 10 minutes until it thickens. Remove from heat and set aside.

Serving:

  • When ready to serve, cut the dessert into squares, spoon some syrup over them, and decorate with nuts. Enjoy!
