Eastern Mediterranean Zucchini Fritters

Fritters are very popular in Eastern Mediterranean countries. They are enjoyed either hot or at room temperature and can be found in homes or simple restaurants serving local dishes. They can be served as mezze or as a side to a main course, elevating a simple and nutritious zucchini into a super tasty delight with layers of feta and fresh herbs.

ZUCCHINI FRITTERS

Ingredients:

  • 1 lb zucchini
  • 1/2 cup chopped scallion
  • 1 small yellow onion, grated
  • 1/2 cup chopped fresh dill
  • 1/4 cup chopped parsley
  • 1/2 cup crumbled feta cheese
  • 4 eggs, lightly beaten
  • 1 cup all-purpose flour
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. Grate the zucchini and place it in a colander. Sprinkle with salt and let it drain for 30 minutes. Squeeze out the moisture and pat dry with paper towels.
  2. Place the zucchini in a bowl and add the feta, scallion, yellow onion, dill, parsley, flour, salt, and pepper to taste.
  3. In a large frying pan over medium heat, add enough olive oil to reach about 6 mm in height and let it heat up.
  4. Drop spoonfuls of the batter into the pan, leaving space between each fritter. Fry for about 2 minutes, then flip and fry the other side for approximately 3 minutes.
  5. Transfer the cooked fritters to a plate and repeat the frying process until all the batter is used up. Enjoy your delicious zucchini fritters!
