Sautéed Shrimp with Cilantro and Lime

In the Eastern Mediterranean countries, there are many lovely ancient fishing villages known for their just-caught seafood and simple recipes. Ingredients:

  • 16 jumbo shrimp
  • 2 cloves of mashed garlic
  • 1 lime
  • 2 tablespoons olive oil
  • ½ cup fresh chopped cilantro
  • Sea salt

Instructions:

  1. Zest the lime or cut the skin into thin strips, saving the lime for later.
  2. In a large frying pan, add the olive oil and mashed garlic. Stir and cook until the garlic is golden brown.
  3. Add the lime zest or rinds and the shrimp to the pan, cooking until the shrimp begin to turn pink.
  4. Squeeze the fresh lime juice over the shrimp, then add the cilantro and a pinch of salt. Let it sizzle for 2 minutes, ensuring the shrimp are well coated in the juices.
  5. Remove the pan from heat and serve the sauteed shrimp hot, garnishing with additional cilantro if desired.
