Cheese Borek with Puff Pastry

If I have to choose one recipe that is gorgeous, tasty, crowd pleaser and easy, I would choose these boreks. My girls and their friends would come after school and I often made a whole tray which they couldn’t wait until it was ready to serve.

Ingredients:

  • 1 package of puff pastry (a whole piece, not small squares)
  • 1 tablespoon white sesame seeds (for topping)
  • 1 egg, lightly beaten (for egg wash)
  • ¼ cup all-purpose flour (for rolling the puff pastry)

Filling:

  • 1 ½ cups feta cheese (Bulgarian feta preferred, crumbled)
  • 4 ounces cream cheese, room temperature
  • ½ cup finely chopped fresh parsley
  • 1 tablespoon black nigella seeds (black sesame seeds)
  • 1 beaten egg

Instructions:

  1. Preheat the oven to 400°F.
  2. Mix all the filling ingredients together until well combined.
  3. On a clean surface, lightly dusted with flour, place the puff pastry with the narrow side of the square facing you. Roll out the pastry slightly thinner using a rolling pin.
  4. Using a sharp knife, make 3-inch deep cuts with a width of a little less than ½ inch for braiding.
  5. Spread the cheese filling on top of the dough about 1 inch away from you. Roll down the dough until you reach the strips. Starting from the corner, braid the strips over the roll until all are braided and crossed.
  6. Brush the egg wash all over the dough. Sprinkle sesame seeds in the hollow areas, skipping the braids. Transfer the pastry to a baking pan.
  7. Bake for about 25 minutes or until golden brown.
  8. Allow it to rest for 15 minutes before serving.
