Grilled Sardines with Lemon and Herbs

Eastern Mediterranean cuisine is known for its fresh ingredients, bold flavors, and healthy preparations. Sardines, small fish rich in omega-3 fatty acids are a popular choice in Eastern Mediterranean dishes due to their nutritional benefits and flavorful profile. I love sardines from a can during the week. But it’s simple to make fresh sardines both on the grill or in oven.

Ingredients:

  • 8 large sardines, cleaned and scaled
  • 3 TBS olive oil
  • 2 lemons (1 for slices, 1 for juice)
  • 4 cloves garlic, minced
  • 1 TBS fresh oregano, chopped (or 1 teaspoon dried oregano)
  • 1 TBS fresh thyme, chopped (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

Preheat your oven to 400°F

  1. In a small bowl, combine the olive oil, juice of 1 lemon, minced garlic, oregano, thyme, salt, and pepper. Mix well.
  2. Place the cleaned sardines in a shallow dish. Pour the marinade over the sardines, making sure they are well-coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  3. Arrange the marinated sardines in a single layer in the baking dish. Bake for 15-20 minutes or until the sardines are cooked through and slightly crispy on the edges.

Immediately, with additional lemon wedges on the side.

  • Side Dishes: Serve with a fresh Greek salad, roasted vegetables, or tabbouleh.
  • Bread: Accompany with warm pita bread or crusty bread to soak up the juices.
  • Sauce: Consider serving with a simple garlic yogurt sauce or tzatziki for added flavor.
