Eastern Mediterranean White Cabbage Salad

White cabbage, a humble and resilient vegetable, is often used in my dishes. Together with apples, it brings sweetness and a crunchy taste infused with Eastern Mediterranean dressing, making this a favorite salad.

Ingredients:

For the Salad:

  • 4 cups shredded white cabbage
  • 2 medium apples, thinly sliced or julienned
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup toasted pine nuts or slivered almonds

For the Dressing:

  • 1/4 cup extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons pomegranate molasses
  • 1 teaspoon ground sumac
  • Salt to taste

Instructions:

  1. Prepare the Salad:
    • Combine the shredded cabbage, sliced apples, red onion, parsley, and mint in a large bowl.
  2. Make the Dressing:
    • In a small bowl or jar, whisk together the olive oil, lemon juice, pomegranate molasses, sumac, and salt until well combined.
  3. Dress the Salad:
    • Pour the dressing over the cabbage mixture and toss well to evenly coat all ingredients.
  4. Add Toppings:
    • Sprinkle the toasted pine nuts or slivered almonds over the salad.
