Roasted Peaches Over Greek Yogurt

Here’s a delicious recipe for Roasted Peaches with Eastern Mediterranean flavors. This dish can be served as a dessert or a side dish. It highlights the sweetness of peaches complemented by the tang of lemon juice and the aroma of Eastern Mediterranean spices.

For Roasting Peaches:

  • 3  ripe peaches, sliced
  • 1 TBS olive oil
  • 1 Lemon
  • 2 TBS honey

For yogurt as a base:

  • 1 ½ cup Greek yogurt
  • 1tsp cardamom powder
  • 1 lemon zest

Over Yogurt:

  • 2 TBS of carob molasse
  • 1 tbsp of runny tahini (or mix the tahini with 1 or 2 TBS water until smooth)
  • Shaved cinnamon or cinnamon powder 
  • Almond or Pistachio on top

Instructions:

Preheat your oven to 400°F (200°C). for about 20 minutes

  1. Place the peach halves in a baking dish, cut side up.
  2. In a small bowl, whisk together the honey, olive oil, fresh lemon juice
  3. Drizzle the honey mixture evenly over the peach halves.
  4. Roast in the preheated oven for 30 – 35 minutes, or until the peaches are tender and caramelized. Remove them from the oven and let them cool slightly.
  5. Meanwhile, combine Greek yogurt, lemon zest, and cardamom powder, mix, and spread over a flat serving tray. Drizzle with carob molasses and tahini. Place the roasted peaches over the Greek yogurt and sprinkle with cinnamon and some sliced almonds from the pistachio.  

Peaches: Make sure they are ripe but firm to hold their shape during roasting.
